This is a local cheese from southern Mexico. To those familiar with the style, I totally recommend this product.Cincho cheese is usually grated and sprinkled over chilaquiles, tostadas, sopes, or other corn-based foods that are traditionally garnished with cream and cheese.The one in my photo was aged for a few months. To do this, you need to take it out of the plastic package, dry it with paper towels, and let it rest in a cool, dry place, over a grid or grille, so that it dries evenly. If it's cracked, it's not good for aging.This is not supposed to taste like parmesan, gouda, fresco or any other cheese. It is supposed to taste the way it actually does. You may not expect that flavor, but if you like it, you risk becoming a fan.The only thing I would ask from the maker is to increase the amount of fat, so that it tastes more boldly.

My mother had been craving some cheese like she gets in her hometown. She had a hard time finding something near where she lives and I happened to run into this cheese. I read the reviews and descriptions and thought how bad could it be? Well, it was THAT bad. This is nothing like the authentic cheeses which it says it’s trying to produce. It had a slime like texture when you eat it and it does not crumble at all. I tried to return it but they don’t take things back. Don’t buy it. Find a local Mexican market near your home and try the cheese before you buy it. I’ll never uy this again. Maybe I’ll use it on my rat traps.

Primera vez que lo pruebo , no sabía que existía este queso , su sabor es fuerte si no estás acostumbrado a este queso , pero me pareció delicioso lo volvería a comprar , solo una pequeña observación no trae instrucciones de cuánto puede durar después de que lo abras, o si puede estar fuera de la nevera

Si esta bueno no esta salado como otros quesos que he comprado llego un poco sudado como viene en bolsa le quite la bolsa y al refri y todo bien me encanta no esta tan seco el queso 🧀 esta bueno 👍

The smell is amazing the taste is great. Yes it's a stinky kinda cheese but that's how it should be. Every Mexican cheese of this kind never has this amazing quality. Went to LA for some but it wasn't quite like this one so here I am to reorder this. My entire family is loving this cheese goes well with all Mexican food.

My wife (from Guerrero) decided to try ordering this cheese from Amazon. Historically we always had to bring it back from Mexico when we visited family. This cheese is spot on and great. We had to try it in chili con queso (not chip dip but an actual breakfast) and it worked perfectly. This cheese is great for grilling and pan-frying as it retains its shape (as it is supposed to).Most low reviews I see on this product are due to people being put off by the unique smell or not knowing how to use this cheese properly.
