Coffee should be used inside a 30 day window from roasting, all beans are different so it is a matter of taste and how long you roast them for. So for me to say they are great it would be based on my taste, so try for yourself and try different roast light, medium dark. I learned and have been adding flavor to my beans now after trying some from a local roaster, could taste the different flavors he put in his beans, now I soak mine for 12 hours in water with a few drops of flavor (32 bottles on Amazon) then dehydrate them for 24 hours before roasting. Something new every week.

The first 3lbs I got were good. They came in a bag as pictured in the ad. I got results I liked. I am learning to use a new roaster and figured I'd stick with the same beans so I could see how different roast profiles changed flavors. The new beans came in a different package were a bit smaller and more sour. Oh well. I've roasted the second delivery a few ways. Waiting 48 hrs after roasting is important. It was sour when tasted too early. Even roasting and dense. I'm new to roasting so my onion is worth what you're paying for it. Photo below had a bean temperature of 455F at drop by my measuring apparatus. 440F was more to my liking. I am making espresso with these.

These beans roast really well. The flavor of the fully roasted black beans is amazing.

This is a good amount of good quality green beans that I can roast in small quantities in my little stovetop roaster. I love doing it and saving money on beans that I can roast to my taste.
