Just received this for Xmas- curious how the process is with getting dough off peel into oven?

Congrats on your Ooni Pro - it's an amazing oven. Most common is to put corn meal or flour on the peel (I prefer fine corn meal).

The better, lesser known way to keep pizzas from sticking when you put them in is to use a wooden peel for putting pizzas in and the metal peel for turning and removing pizzas. I still rub in a light about of corn meal onto the wooden peel, but it is less prone to sticking than the metal peel.

Whether I use metal or wood, I add corn meal, then the dough, then I swirl it around a little bit to make sure it's free from the peel.

How long does it really take to get to optimal temp using wood/ charcoal in your experience? Tips on type of wood,and where to buy?

The instructions say 20 minutes. That's not completely off base, but it assumes you have a roaring fire going almost immediately. This is with well seasoned firewood. I've found that charcoal doesn't get as hot and takes longer.

Wood is a problem! The max size is 10" long and 1.5" in diameter. The wood at our grocery store is considerably larger than this! I was able to find "European Cut" firewood at Home Depot. It's not cut as long, so it actually fits. I did have to use an axe to split it into smaller bits of kindling, though. The full-size logs would not fit into the Ooni.

My recommendation: Unless you have a source of property sized firewood and the willingness to split logs in your back yard, opt for the pellet or gas models.

Question 4

he chimney doesn't have a cap or spark arrestor, would this be safe to use during the dry summer months?

I'm sure caution isn't a bad idea, but I've used mine in the summer without incident; i'd also have to say that I've never noticed anything other than light smoke emerging from the chimney - I've never seen anything which looks like a cinder or particle emitted (I only used wood and charcoal in my oven).
